Champagne Bollinger Special Cuvèe

This excellent cuvée owes its name to William Folks, a partner in Mentzendorff (the UK's historic Champagne distributor) and a great Champagne connoisseur, who was convinced that to simply call it 'Cuvée Sans Année' this Champagne, would be reductive. Bollinger shared this thought of his and began calling it Special Cuvée. A Champagne rich in style and excellent quality, it owes its character to the high percentage of Pinot Noir grapes and the inclusion of base wine aged in oak barrels.

Brilliant straw yellow and crisscrossed with endless minute bubbles, it smells of white flowers, citrus and cookie, pyro powder, almond herb confection and acacia honey. Sip balanced between freshness and softness, with savory and mineral trail to close it all out.

Optimal with an aperitif of cubes of grana cheese and mortadella (simple but impressive), or with any fish dish whether raw or cooked or with saucy white meats,
